Fried rice is one of my favorite ways to use up leftovers, and sweet corn fried rice with kielbasa is something I make all the time. When I want to make something in less than 30 minutes, this is my go-to. It’s easy, made in one pan, and has the best mix of smoky kielbasa, sweet corn, and a bit of saltiness. I also love adding broccoli or other veggies, and if I’m in the mood, I’ll swap the kielbasa for bacon.
The kielbasa gets crispy in the pan, the eggs make it more filling, and the corn adds a little sweetness. I love finishing it off with diced scallions or green onions and chopped parsley.
Why You’ll Love This Recipe
- One skillet, less cleanup – No extra dishes to wash.
- A great way to use up leftover rice – Cold, day-old rice works best.
- Tastes even better the next day – The seasonings soak in overnight.
Equipment You’ll Need
- Large skillet or wok
- Cutting board and knife
- Wooden spoon or spatula
- Measuring cups and spoons
What Ingredients You’ll Need (With Substitutions)
For the Fried Rice:
- Kielbasa – Sliced into half-moons. Andouille works too for a smoky, spicy version.
- Jasmine rice – Best if made ahead and chilled. Other long-grain rice works too.
- Frozen sweet corn – No need to thaw! Canned or fresh corn works too.
- Eggs – Scrambled and mixed in for extra texture.
- Scallions (or green onions) – Adds a fresh, mild onion flavor.
- Parsley – Chopped and sprinkled on top.
- Avocado oil – For frying. Olive oil works too.
- Liquid aminos – Gives the rice a savory umami flavor. Low-sodium soy sauce works too.
- Salt + black pepper – To taste.
- Sesame oil (optional) – Stirred in at the end for extra depth.
For a Little Spice
If you like heat, add a dash of red pepper flakes or a little sriracha when serving.
How to Make Kielbasa Fried Rice with Corn and Scrambled Eggs
Step 1: Prep Everything
- Slice the kielbasa into half-moons.
- Chop the scallions and parsley.
- Crack the eggs into a bowl and beat them.
- If using fresh rice, spread it on a tray to cool before frying.
Step 2: Sear the Kielbasa and Add Corn
Heat a large skillet or wok over medium heat and add avocado oil. Once hot, add the sliced kielbasa and cook for 3-4 minutes per side until browned.
Stir in the frozen sweet corn and cook for another 2 minutes.
Step 3: Scramble the Eggs
Push the kielbasa and corn to one side of the pan. Pour the beaten eggs into the empty space and let them cook, stirring gently until just set. Then mix them into the rest of the pan.
Step 4: Fry the Rice and Season
Add the cooked jasmine rice and break up any clumps. Stir-fry for 3-4 minutes. Drizzle with liquid aminos (or soy sauce) and toss everything together.

Step 5: Finish and Serve
Turn off the heat and stir in a drizzle of sesame oil if using. Sprinkle with scallions and parsley. Serve hot!
Tips
Use cold rice – Freshly cooked rice can get too soft, so day-old rice is best.
Crisp the kielbasa first – Let it cook for a few minutes before adding anything else.
Don’t overcook the eggs – Keep them soft so they mix into the rice easily.
How to Serve It
I like eating this straight from the skillet, but if I have extra, I save it for the next day—it reheats really well. A little extra scallion or parsley on top makes it even better.
